Ķathy's Ŧhanksgiving Dinńer

Can I start this post with an apology? Okay, good.

I am so sorry for not posting in twenty days. So sorry. I have been so busy with my classes. But today is the day for the Kathy's Thanksgiving Dinner recipe.

I am going to get straight to it. I am adding links to the best organic and/or gluten free options for each ingredient. If you do not have a Whole Foods near you where you can get the best organic/gluten free options, you can order any of the linked options directly from the shopOrganic  or Gluten Free Palace websites.

The ingredients you will need..

• One large rotisserie hen or a pre-cooked turkey breast. (This is a short cut. You know how I love my time saving short cuts.) You can also cook the chicken breast yourself. If you choose to do so you will need four chicken breast.
• 1 can of Cream of Celery soup (pacific-foods-organic-cream-of-celery)
• 1 can of Cream of Chicken soup (pacific-foods-organic-cream-of-chicken)
• 1 8oz. or 10oz. bag of stuffing mix. (arrowhead-mills-organic-savory-herb-stuffing) (Gluten-Free-Savory-Stuffing-Mix)
• 1 stick of butter or 1/2 c. of margarine. ( I like to use Organic Valley butter. You can usually find this at any grocery store)
• 2 c. Chicken broth (pacific-foods-organic-free-range-chicken-broth You can find this broth at Publix as well as whole foods)

The construction of this dish is very easy.
Three things to start
- Mix together the Cream of Celery and Cream of Chicken soups, and Chicken broth.
- Melt the butter and mix into the stuffing.
- Pull the meat off of the rotisserie hen/ or pull the turkey breast.
 Now you're ready to start layering. In a 13x9 baking dish (greased with a little olive oil) layer half of the stuffing, half of the chicken, and half of the soup/broth mixture. Then repeat. It's that simple.
Sprinkle a little extra stuffing on top for crunch if desired.
 • Bake on 350º for 45 minutes. Serve and Enjoy!

Unfortunately I have been down with the flu. Hence the lack of a Kathy's Thanksgiving Dinner recipe post.

I am sorry for the lack of a recipe post. I was so so sick. I am feeling much better now and I am working on the post! It should be up very soon. I hope everyone had a very Happy New! I hope to share many healthy, gluten free recipes with y'all this year!
